Beach Trip Part 4

This installment of my trip report will wrap up our time at the beach, and then I will be sure to go back and finish up the recap of my Disney trip from May (gosh I feel so behind!)

Ok so where I left off, we had eaten dinner at the Baytowne Village area of Sandestin and we then headed back to our condo across the highway and checked out the observation deck on top of our condo tower.

We were the only ones up there, so it was nice and relaxing to just take in the beautiful scenery. We called it a night after some TV watching, and the next morning I did much of the same as the day before, I headed to the pool!

After a couple of hours, I went back up to the room to get some work done. Some new Disney travel deals had just come out, and I had some clients ready to book. I worked for a couple of hours and then Bobby came and picked me up. We headed back to the Baytowne Village area for lunch. They had a Broken Egg Cafe there, and since we KNOW their food is amazing, we settled on it for a delicious brunch/lunch.

We headed back to the condo and decided taking naps was an awesome thing to do on a beach vacation. We woke up to some thunder and lightning. It was storming!

We decided we were enjoying being lazy way too much to put on “real clothes” and go out to dinner, so we did what any normal person would do, we ordered a pizza and watched endless episodes of Law and Order. Then we ate ice cream. It was the perfect evening for the last night of our trip.

The next morning we packed up the condo and checked out and I went with Bobby to the conference center and sat out in the hall bumming off the free wi fi because I had a LOT of work to do. After a couple of hours of work, I headed to the outlet malls by myself, which is becoming a little bit of a tradition of mine. Since this trip falls near (or on my birthday like last year) I never feel bad about buying a couple of new things!

I headed back to the conference center at noon to pick up Bobby, and we headed to Panera bread for lunch before hitting the road back to Mississippi! Goodbye beach until next year!

Weekly Recap: July Week 4

 

Good morning! So, who spent the day yesterday watching the Olympics? This girl! I switched between television and live feeds online, but got my fill of sports for the day. I have a feeling I am not going to get much accomplished in the next couple of weeks!

I did manage to get a decent week of workouts in, and am looking forward of week two of Best Body Bootcamp!

Sunday: rest

Monday: BBB workout A, 20 minutes bike (HIIT)

Tuesday: BBB workout B, 20 minutes bike (intervals)

Wednesday: rest

Thursday: BBB workout C, 20 minutes bike

Friday: biceps and core

Saturday: core, stretching, legs

I am excited to challenge myself with BBB week two, and hopefully won’t have to be in my boot too much longer. I go to the doctor August 6th, so fingers crossed that it is not a stress fracture and I am able to go back to running again before the Disneyland half. I can’t believe I leave in just about a month for it! What is even more crazy is that Health Living Summit is just around the corner. I am so excited to be a speaker and can’t wait to see some of you very very soon!

QOTD: Opening ceremonies, loved it, hated it, favorite part?

Happy Saturday! I hope you are having a glorious weekend. So who watched the opening ceremonies last night? Thoughts? Favorite parts? I can’t wait for sports all day everyday. My poor DVR is going to get a workout!

1.) How/Why did you start blogging?

I started blogging because I’d planned to chronicle my training and efforts toward a potential Boston qualifying marathon. Shockingly (to me) and because I’m such a procrastinator, the BQ happened before I got the blog started, so I used it to track my training for my first Boston instead.

2.) Sum up your blog in a couple sentences

My blog is is a collection of rants and ruminations on running, fitness, food, family and whatever else I see fit to print, including some fun giveaways and product reviews.

3.)What do you wish to accomplish/achieve by blogging?

It’s simply my creative outlet, and my way of disciplining myself to write almost daily. If it helps me get some freelance writing gigs, all the better. What I didn’t anticipate are the amazing connections I’ve made with other runners around the world. I am humbled by the helpfulness and kindness that comes from people through the comments every day.

4.)What is your biggest healthy living accomplishment?

I went from fat girl to gym rat to runner and qualified for Boston at my second marathon. In my mind at the time, that was something not even on my radar as a possibility. It showed me that anything truly is possible and that I was setting the bar too low for myself in many areas of my life.

QOTD: Anyone racing this weekend?

Enchilada Casserole with Ground Turkey

 

Good morning! I don’t do this too often, but I have a recipe to share with you today! I have made it twice now and Bobby loves it. It’s easy, quick, and we usually have leftovers, which is a plus for me….no cooking the next night! I found a variation of it online but changed it up a bit to make it more to my liking. I am really picky and I even like this, so I think it would be a kid favorite as well. I am not a HUGE onion fan so I chop them up really tiny and don’t even notice them.

Enchilada Casserole with Ground Turkey

-Fills a 13×9 casserole dish, 30-35 minute cook time, 15 minute prep time

INGREDIENTS:

– one package of Jenni-O ground turkey

-one can of enchilada sauce ( I use mild)

-1/3 of an onion

– 6 flour tortilla shells (I use whole grain)

-cheddar cheese (1-1.5 cups)

-cooking spray

-Preheat oven to 350

-cook turkey according to package. drain

-chop and add onion, cook in pan with turkey 3-5 minutes

-heat 1/2 can of enchilada sauce in saucepan

-spray bottom of  casserole dish

-take one tortilla, dip one side in heated sauce in pan, put in center of casserole dish

-take second tortilla, tear in half, dip halves in sauce and put in bottom of the dish so bottom of the dish is covered

– take half of the cooked turkey/onion combo and put on top of tortillas

-Sprinkle a layer of cheese on top of turkey

-repeat steps of dipping tortillas and layering on top of first layer (one whole shell and one torn in half)

-pour the rest of the turkey/onion combo on the shells, add cheese on top

-take final two shells, dip in sauce and layer on top of mixture again

-pour remaining half of enchilada sauce on top of everything and top with cheese

-bake, uncovered, for 30-35 minutes

Olympics Survey

 

I have mentioned on the blog before my love of the Olympics. Did you also know that I attended the 1996 Olympics in Atlanta? We lived in Atlanta for 7 years and had just moved away a couple years before, so we decided to go back and visit friends. I was going into sixth grade, and was stoked to cheer on my country. I so wanted to go to the gymnastics events but they were sold out so we went with my sisters choice, equestrian horseback riding. Not my first choice but still exciting. We drove from New Orleans, with the van decked out in shoe polish “honk if you love the USA” and “Olympics bound.” It was SO much fun. We painted our nails red white and blue, and cheered our little hearts out. Ah, memories. Ok ok enough of a walk down memory lane. I got this survey from Enjoy Your Healthy Life, and just knew I had to participate!

summer: gymnastics, volleyball, track and marathon

winter: figure skating, curling

summer: boxing/wrestling

Toughest sport in my opinion:

summer: gymnastics purely for the technical aspect of it. I can’t even do a cartwheel, so it fascinates me! I of course think the marathon is tough endurance-wise!

winter: figure skating. Being flexible and daring…on ice? Crazy!

Learn From Experience

 

I truly believe that we are supposed to learn from every experience in life, the good and the bad, the fun and the agonizing. I also believe in not “wasting” an experience. What I mean, is when something happens, good or bad but I tend to learn more in the bad, and we don’t learn anything from it, it’s almost like that experience was a waste.

One of my favorite quotes is “Pain is God’s megaphone.” I firmly believe God has really been trying to get my attention lately. For what? I am not sure yet. last time I injured my foot, after some sulking and pouting, I chose to learn from the experience. If I had not been injured, I most likely would not have started and grown to love weight lifting, which was a huge positive in my Life. So….injury bad, but learning something far greater = good.

So, here I am again, no running, same foot pain again, and not gong to lie, frustrated as heck. I have been doing a lot of praying, and having a lot of “what am I supposed to learn from this?” conversations with myself. My mood tends to change by the day. Some days, I am very optimistic, know I will get better, and will run again. But there are some days, like yesterday, where I let it get the best of me. I was very frustrated, upset, and had a lot of “why is this happening to me…again!” thoughts.

It’s been a week that I have been back in my boot or constantly wearing stiff soled running shoes, and I am getting antsy. I just want to run, go back to the way things were, cross another day off my training plan. I know I stand to gain some knowledge, some experience or life lesson from this, but I am at a loss as to what it is for now. I know sometimes we may not see the why until way down the road, or ever but I keep hoping and praying it is for good reason, and that my experiences will be used to maybe help other people someday in some capacity. Until I figure it out, I am going to keep on keeping on, learning, growing, and looking for life lessons and experiences through my injury.

QOTD: What is a lesson you had to learn through a painful experience?

Beach Trip 2012: Part 3

 

We left off part 2 of the trip after our amazingly fun day relaxing at the beach and playing some volleyball. Unfortunately, we had to be up bright and early Monday morning so Bobby could be at his conference for 8:00. We ate breakfast together before he left, and then I gathered my things and headed down to the pool. It opened at 8:00, so i was literally the first one down there. Here is what was behind me and the pool.

It was nice and quiet and I obviously had my pick of the chairs. I settled in and started reading my book, it was glorious.  There was a swim behind waterfall at the pool as well. I don’t know about you, but I absolutely love the sound of water. Whether it be waves, a fountain or the rain, I just find it so soothing.

I alternated between laying on my chair and dipping into the pool because it got very hot very quickly.

After about three hours, I decided to head back up to the condo and take a shower before Bobby got back from his conference. I was getting hungry for lunch and I made us sandwiches for when he returned. We spent the afternoon just hanging out in the condo, reading, watching TV, and being bums. It was awesome. We did however decide to head over to the Baytowne Wharf for dinner and to walk around.

For those not familiar with Sandestin, it’s huge, and on the bay side is this well, village, for lack of a better term. Condos, homes, shops, restaurants, all within walking distance. There are fun things for kids and families alike, and we had a good time just walking around.

We settled on a restaurant overlooking the water with a live band playing.

There was a nice breeze off the water so it wasn’t hot at all. Not to mention there were some scary dark clouds overhead! We enjoyed our food, and then went for a walk down the pier right outside the restaurant. You could see the marina, and there were some big boats!

We walked around the village for awhile, watching the kids, checking out the shops, and enjoying ourselves. Bobby even got a funnel cake.

On the workout front, I completed day one of the Best Body Bootcamp yesterday, and wow were my arms jello! It was an upper body workout, so it didn’t bother my foot any which was helpful. I can’t wait for more! It’s going to be a fun 8 weeks!

Bootcamp and Weekend Thoughts

 

Good morning friends! Guess what?

I was so bummed when I missed out on the last round of Tina’s Best Body Bootcamp, so I wanted to be sure I didn’t miss out this time. I registered early, have printed out my workouts, and I can’t wait to get started today! I will be updating my progress during the next eight weeks. This will be good for me since I am not running for another 1.5 weeks…it will give me something else to focus on. (By the way you won’t believe this but I got a splinter in the bottom of my inured foot. How in the WOLRD! That thing is not coming out either!)

Round Two

A few things on my mind this weekend….

1.) Waivers went up for the Disneyland half. This made me very excited…and very scared. If and that’s a big IF I can run August 1st, I will have exactly one month to get ready for this half marathon. Prior to my injury I had run one 7 miler and one 9 miler as far as long runs go…and they were a month ago…yikes. We aren’t running this race for time anyway, but still, it’s scary.

2.) Next, my awesome husband gave me patio furniture for my birthday and i took it upon myself to start putting it together. I put together this chair and a coffee table. Took me about an hour, and there is another chair AND a couch to put together…I think I will leave those to Bobby. That was tough! Why is it when things require assembly that the screws and holes never line up properly?!?

3.) I am now obsessed with the show Once Upon a Time. I just finished all eight seasons of Desperate Housewives on Hulu Plus (by the way, what are yall’s thoughts on the ending? I thought it was so-so.) Anyway, my buddy Karen had told me about this show awhile back and when I saw it was on Hulu, I decided to start the series this weekend. I am loving it so far! If you haven’t seen it be sure to check it out.

Weekly Update: July week 3 and a new Ambassador

 

Happy Sunday! This weeks workouts have been different from usual considering I haven’t been running. I did however manage to get in a few good workouts, and I also have something exciting news to share with you all. But first, the workouts:

Sunday: rest

Monday: 2 mile run, chest, triceps, abs

Tuesday: 20 minutes stationary bike, back, biceps, abs

Wednesday: 1.5 mile run (after this run I decided to not run for 2 weeks)

Thursday: chest, triceps, abs

Friday: back, biceps, abs, legs; 15 minutes stationary bike

Saturday: rest

I did well on the weights front, 4 x’s last week, with 2 runs and 2 times cross training. This coming week will be all cross training and weights of course, and then I will try running again middle of the next week. Fingers crossed!

Ok, so moving on to the exciting news I spoke of earlier. I was contacted a couple of weeks ago by Verizon Wireless about being an ambassador for them. Of course, I was stoked and said yes. After much anticipation (and with Fedex royally messing up the shipment! They even admitted I didn’t get my box because the driver was LAZY!) I got my new phone, the Samsung Galaxy SIII. You may remember a little over a year ago I actually had the galaxy vibrant by Samsung, and recently traded it in for an iPhone due to some issues I was having mainly with the service through Cellular South. All of that to say I was very curious to see how the Galaxy SIII measured up to the original Galaxy.

The biggest “wow” I saw right off the bat was how big the screen was. My original Galaxy had a screen bigger than my iPhone but this one is HUGE!

Galaxy SIII on the left, iPhone 4S on the right. I immediately charged it up and started playing with it. The 4G LTE is super fast! Everything moves really smoothly with no freezes, pauses, or breaks so far. I have a few other favorites that I have discovered but I will save them for another post. I will be tweeting, texting, calling, instagramming, and web surfing from this bad boy for the next three months so hang on!
