5 Things Friday XXV

Hey guys! I haven’t done one of these in awhile so I thought it would be fun for this Memorial Day weekend Friday.

1.) Me, Bobby, and Emma Kate are headed to Orlando on Sunday and will be hitting the Disney Waterparks (her first time at a water park!) We will be going to Blizzard Beach because I hear that is the most kid friendly of the two. I can’t wait! I haven’t been to a Disney Waterpark in YEARS.

2.) While we are in Orlando we will be staying at the Wyndham I-Drive, which is the official hotel for International drive. I will be posting pictures and Insta stories on Sunday and Monday, so stay tuned!

3.) I attended a Carnival Cruise Lines event yesterday at Port Canaveral, and will be posting a blog post about it soon. We were on the Carnival Liberty for a couple of hours, eating hamburgers!

4.) You may have noticed I am finally back to running! I haven’t done anything over three miles, but my leg is feeling better and better. I still have to foam roll and stretch really well, and don’t have 100% range of motion when I squat or lunge, but I have no knee pain!

5.) Recently we tried out FitLife foods, which has locations here in Tampa, and delivers meals right to your door. You get to pick what meals you want and when you want them delivered, and they just show up! Some of them tasted pretty good, and some were honestly pretty bland and needed some serious salt and pepper. I enjoyed not having to think/worry about what I was going to eat for dinner as a busy working mom, which was the main/huge draw for me. I just knew we had meals in the refrigerator, and so that stress hanging over my head was gone, plus I didn’t have to go to the store as much. But, the one downside for us/Bobby is that the portion sizes were too small for him. He eats a lot and works out a lot and would need 2-3 “meals” for one meal, and that gets expensive quickly.  I may give them another go the next time he is out of town and it’s just me and Emma Kate, because I truly enjoyed the convenience! If you haven’t tried it out I say give it a go one time!

May 2017 Goals

Happy new month! I know for most of the country it’s just starting to warm up and people are thinking about getting outside and doing outdoor activities. However, here in Florida, it’s getting into the mid 90’s and it’s time to hibernate inside for the next 6 months! Before we get into my May goals, let’s take a look at April. I have some interesting stuff going on this month so read all the way down!

1.) Be able to run the Star Wars Half pain free: C Well, my knee did hurt for the majority of the race, but it was manageable and I was still able to run/walk. The good news is every day it got better and better after, so it isn’t like it stayed hurting the same amount for days and days after. It’s been over a week and I have been walking pain free for 3 days. Back to foam rolling, stretching, and walking. (Please realize I knew that running 13.1 pain free was a stretch. Anyone who doesn’t run for 8 weeks then tries to run a half is going to have some aches and pains, but I am just glad my quad gave me zero pain, which is where the injury began back in February!)

2.) Organize extra room: B+ With Bobby’s help, we moved some of the storage items out and the room looks a lot better. I still have a couple of boxes and a handful of random items I need to find a home for, but it looks so much better than it did last month!

3.) Walk 4x’s a week: B I am giving myself a B because there was one week I only walked 3 times. It made me feel good to be able to do “something” even though I wasn’t running. We had some nice weather last month so I’m glad I got to take advantage of that before the heat set in. I was walking up to 3 miles at a time pain free!

May goals:

1.) Eat Salad 3x’s a week: If you know me at all, you know salad is not my thing. However, I have been trying really hard at making myself eat it, and I know it’s good for me, too. I have been adding fruit and other things I like to make it easier, and so far it hasn’t been so bad (I started my experiment over the weekend). I know it will help my overall health!

2.) Organize my guest room: Now that one room is almost completely cleaned out, it’s time to move on to the guest room. Same as last month, this room just needs some purging and organizing to make me not want to keep the door shut all the time!

3.) Lose 4 pounds: Ok guys. Here is the big one. It’s something I have been trying to ignore since March, but I can’t any longer. I was doing so well maintaining my weight when we first moved to Florida, but then I got injured. I thought I would only be out of commission for a week or two, so I didn’t bother trying to do other workouts because I thought my body could use a break. Then two weeks turned into a month then six weeks and two months. Yes I started walking after 6/7 weeks, but with the way I was eating I was still gaining weight. After our most recent trip and feeling gross after eating fried and fatty foods for a week, I decided my body needed a cleanse/reset.

I have sold Advocare for years, but I generally don’t talk about it unless someone asks me, and then I took the past 6 months off because of the move etc. However, I think the best thing for me right now is to do the 24 day challenge. I have done it a few times in the past and it’s a really good jump start for me to get back on track. Please hear me when I say it’s ENTIRELY possible to lose weight without this program. I have done it before. However, sometimes I need a little more motivation and a strict schedule to follow, an I think right now this is what I need.

runDisney Star Wars Half Marathon 2017 Race Recap

My husband and I recently ran the second annual Star Wars Dark Side half marathon at Walt Disney World. Check out my recap of the race below and email heather@heatherslookingglass.com if you have any questions about the race.

My alarm went off at 2:45 am, and I was actually oddly enough already awake. I knew just laying there would make it even harder to get up, so I begrudgingly did it and got ready for the race, taping my knee, and psyching myself up. I scarfed down a Quest bar and Bobby made eggs (seriously, who makes eggs at 2:45 in the morning?) and soon we were off to the buses. It was slightly chilly (for me, but I’m always cold) but not “cold” by any means. I could tell it was going to be a humid race though.

The bus pickup for Bay Lake Tower and the Contemporary was on the far side of the convention center, so we had quite a hike to get where we were going. However a bus was there waiting and we snagged the front row. We made it to the star very quickly since it was in the Magic Kingdom parking lot, and we got in line for the bathrooms then made it into our corals with an hour left to spare. I know runDisney wants to make sure everyone gets there on time, but we got on a bus right before 4 am (which is when they say the last buses leave for runners) and we had WAY more than enough time to spare. We sat down in coral C and waited…and waited…and waited. When you are sitting there waiting to run 13.1 miles you begin to contemplate why you spent money to be tortured in this way. Anyway, soon it was time for the National Anthem and then coral A got their fireworks and start, and we were moving up to the front.

Then we were running…and it was dark. Like REALLY dark. A lot of the street lights weren’t on/working and I was concerned about tripping on something it was so dark. We made a huge loop and ended up almost next to the start line. We were in the 3rd of 19 waves, so we kept hearing fireworks for a very long time. We then turned onto Bear Island road, which reminded me of running the marathon around into the back of Animal Kingdom, which is exactly where we were headed. But not before running into some storm troopers!

My knee began to bother me a little bit so we did run walk intervals, which I was fine with since I had not been running since the Princess half eight weeks ago.

There were a few photo op’s that didn’t involve characters which I thought was a nice touch. Since I don’t know a ton about Star Wars (don’t hate me) I had to get Bobby to explain several things to me.

We made it into Animal Kingdom, hit the bathrooms, and made it around the park. I was actually shooting an Instagram story in the below photo. Gotta work while I run!

On the other side of Animal Kingdom we ran into these guys. Bobby told me to do this with my hands but I still have no idea why.

Dark Maul was next. Clearly I am impressed with Star Wars characters. However, Bobby was in his element.

At about mile eight, Bobby’s lack of training began to show. Poor guy doesn’t have time to run, and he ran one six mile run and a few short runs before the race, but that’s it. His hamstrings began to cramp up and his knees were aching pretty badly, so we did more walking the last few miles of the race, and stopped some so he could stretch.

I really enjoyed running a different course than the same ones I have done over and over, and in particular I loved going through Hollywood Studios an dover the Boardwalk.

But what I did NOT like is the path going from DHS to the Boardwalk. It’s super narrow and was really congested. You can’t get around people so it was slow going the whole way. Oh well!

As we came down towards the International gateway area, we saw Chewie but didn’t see a clear path to get to him from the road, so we hopped in the grass to get over to the line and a cast member yelled at us in a not so magical voice to get off the grass. Oy.

We made the turn into EPCOT and started around the World Showcase.

We made one final turn past the mile 13 marker, and were in the home stretch. Across the finish line we went and another half marathon was now complete.

We didn’t stick around because my parents were watching Emma Kate, and we had fastpasses at Animal Kingdom so we hopped on a bus and headed back to the resort, eating snacks from our boxes on the way. Another race to check off my list!

Blog to Business at Food and Wine Conference

Tampa Tuesdays: Valspar Championship 2017

A few weeks ago, I was invited to attend the Valspar championship and a media event at Innisbrook here in Florida. Being new to the area, I had not yet had a chance to visit here, and was excited to go. A few bloggers were selected to attend a foodie event during the tournament, and I wanted to share my experience with you from that, as well as the Toby Keith concert we attended the next night on the driving range!

When the bloggers all arrived at the event, we were lead through the tournament towards the Grape and Grain. I had not been to a PGA tournament in many years, so it was fun to see everything as we walked through.

At Grape and Grain, celebrity chef Ming Tsai was doing a cooking demonstration. After the demonstration, he chatted with us bloggers, answered questions, and we got to taste some of his food. He was super personable and easy to talk with, and took photos with all the bloggers. What a special treat to have him at the tournament!

Afterwards, we got to walk around a little bit. Valspar had some really cool decorations scattered about. I especially loved the chandelier and flower centerpieces!

We were then treated to a special lunch outside. Did you know that you do NOT have to be a member at Innisbrook to eat at the restaurant? I HIGHLY recommend you check it out. All of the food was SO amazing. We even got to chat with the chef!

Everything tasted so fresh. I can’t wait to bring my husband back here I know he will love it!

After lunch, we relaxed for a few minutes out on the gorgeous deck overlooking the course while sipping on watermelon drinks. So light and refreshing on a warm day!

The next afternoon, my husband and I headed back to Innisbrook to see the end of the day’s play of the tournament and attend the Toby Keith concert. We really enjoyed the concert but were bummed it started much alter than anticipated. We didn’t get to stay for the whole thing because we had to go back to pick up our toddler.

All in all a great weekend with great weather. They really know how to do a golf tournament! Everything was very well done from the food to the course to the entertainment and volunteers. I’m sure we will be back!

Tampa Tuesdays: Busch Gardens Tampa

On Saturday, Bobby and I took Emma Kate to Busch Gardens Tampa. It was our first experience in the park aside from seeing a small portion when we went for a media event a few weeks ago. I did a little bit of research to at least know what we did and didn’t want to do, and we arrived at the park when it opened at 10:00 (which I thought was late!)

Getting on the tram at the parking lot was a little hectic as there was no one there to keep people in order, and there were no true “lines”. We had a family try and push us out of the way to get on the tram (I was holding EK in my arms!) and I had to yell at a guy to let Bobby get on the tram with us b/c he had the stroller and people were pushing in front of him. However, I tried to shake it off and not let it ruin the day. The park can’t control what other people do, and it wasn’t their fault. We made it to the front, and bag check was smooth and quick.

I wanted Bobby to get to ride at least one roller coaster, so he jumped in line for Cheetah Hunt because it said there was only a ten minute wait. I took Emma Kate to go visit some animals while we waited.

After about 30 minutes I texted Bobby and he was still in line. I was not thrilled because Emma Kate was getting bored and wanted to go ride the train. We visited the giraffes which there was SO many of, very cool, and then waited some more.

All in all he was gone a total of 45 minutes for a ten minute wait, so I’m not sure what happened there. Maybe it temporarily broke down and we didn’t realize. Either way, nothing we could do to change it so we moved along and got in line for the train.

It was fun seeing the animals along the route. A very nice touch. We decided to get off at the next stop and go see the monkeys and the tigers. This guy was just sitting up at the glass staring at all the kids. Emma Kate kept saying she wanted to hold him, of course.

We also saw a couple of sleepy tigers. I loved all the lush landscaping in their habitats with multiple vantage points to view them from.

By this time it was after noon, and we were getting  hungry. We tried to get Emma Kate to nap in her stroller as we walked down towards the Food and Wine festival area.

I love how the booths are mainly contained to two areas so you don’t have to walk all that far to get from one to another. Also, there were no long lines to wait in which was a plus.

We each had an 8 pack sampler card courtesy of Busch Gardens, and were ready to enjoy the festival. (These can be purchased at the booths, and also you can find festival guides at each booth with a map and list of all the food and drink offerings.)

First up, Bobby got the lamb chops and a mango margarita, which got two thumbs up.

We then headed over towards the two Coke booths, which are next door to an inside air conditioned area with tables. We were happy to find this spot, as it was getting HOT outside. Bobby got a couple more things to eat and I got a pulled pork slider. After a brief rest, we headed over towards the concert area where there were a lot of other booths.

Bobby tried some ribs, and I got my favorite: the bacon mac and cheese, which was just as delicious as I remembered it. Emma Kate loved it, too and kept stealing my bacon.

We both also had watermelon margaritas, which would become our favorite drink of the festival. (I may have had three.) I may have also had a regular margarita on the rocks at the margarita bar while we were in this area.

Emma Kate had been dying to “see Elmo” in the kids area, so we went there next. This area was great. TONS to do for kids all confined to one very large space. She was so overwhelmed we weren’t sure what to do first. She rode several rides, and even did a small “water ride” by herself!

We put her in the bounce house because she LOVES those things, but there were a lot of big kids in there and she got upset and wanted to get out. We also did the carousel, and she climbed up in a large tree house area with Bobby.

Seriously we could have stayed in this area all day and Emma Kate would have been jjuussttt fine. There was also a huge really cool looking splash pad area, but we decided to skip that one for the day because it was already getting late in the day and we were all tired. We did however have one more stop to make, the show with Elmo and the gang! EK clapped and waved, and even got to touch Grover which I think made her whole day. This area was covered and had fans which was a very nice touch on such a sunny afternoon. There were also plenty of benches and other seating around the whole kids area for moms and dads to take a rest as the kids played.

We still had a couple of punches left on our food and wine cards, so Bobby got some steak and said it was his favorite dish of the day.

We met up with Megan and Gabe for a few minutes and chatted at a table and people watched before calling it a day. Check out the cool topiary in the background!

The park is really big, and there was no way we could have done everything in a day, which just means we will have to go back!

Not five minutes after leaving the park, this one fell asleep in the car. I think that’s a sign of a good day!

April 2017 Goals

Happy Spring! Can you believe it? I’m actually EARLY with my goals post this month! I hope the weather is warming up wherever you are. I know that spring makes people want to clean and organize, so this is the perfect time to get serious about those goals you set in January (or to create some new ones). Before we get into my goals for April, let’s take a look back at my not so stellar March goals:

1.) Track my food 1-2 days a week on My Fitness Pal: F This was not my best month. As you may know, I injured myself running the Princess half so March was just kind of wonky on the health and fitness front. I was angry and frustrated with my injury for a couple of weeks, so I wasn’t super focused on my eating. I will say the second half of the month I did much better and ate by feeling of fullness rather than snacking just to have something to do while I worked etc.

2.) Orange Theory twice a week: F After the Princess half, I went twice in 3 days before realizing I needed to freeze my membership for a month in order to heal my leg. So, obviously I didn’t go twice a week after that/the entire month of March, so this one doesn’t really apply and I don’t consider it a true failure because I have been stretching and foam rolling and doing PT exercises.

3.) Put Together my Bar Stools: A+ YES! Finally an A+! I put one together by myself, then helped Bobby with the other two. I am sitting on one as I type, too. It’s nice to have another seating option other than our dining room table, especially for quick meals or just to chat with someone while they are in the kitchen.

Now for my April goals:

1.) Be able to run the Star Wars Half pain free: I started walking some, and also continue to stretch and foam roll in hopes I can run walk the Star Wars half pain free at the end of April. Fingers crossed!

2.) Organize extra room: We have an extra room in our house the we currently use for storage. Since I never go in there, I just shut the door and pretend it doesn’t exist. I know I need to get it organized though, so I am going to work on that this month.

3.) Walk 4x’s a week: My plan is to walk 2-3 miles four times a week, with a few short (like 1/10 of a mile) runs thrown in until I feel like I can run for longer without hurting.

Tampa Tuesdays: Food and Wine Festival at Busch Gardens

It’s officially spring, and that means it’s time for the Food and Wine festival at Busch Gardens! I was invited to a media event a couple of weeks ago to check out some of the amazing food offerings, and wanted to share them with you for Tampa Tuesdays.

When we arrived at Busch Gardens, we were immediately greeted by an adorable topiary, and of course some wine!

There was food, music, drinks, and some friendly faces.

Servers passed around some of the offerings, while others were found at the food booths just as you would find them in the parks during the festival. The bacon macaroni and cheese was my favorite, hands down! This was just one of the many offerings at the 13 food cabins, 65+ fine wines and 70+ craft beers!

However the duck fat truffle fries were a close second.

Each cabin had a menu board with the food and drinks available as well as prices. Some even had pictures which I found very helpful.

The president of Busch Gardens, Stewart Clark, spoke a few words, and it was fun to see the excitement he had for the event.

One of the new pavilions is called “cooking with Coke”, and I really enjoyed the pulled pork sliders with Coca-Cola® Cherry BBQ sauce.

No lie, after I took the below photo, a bird swooped down and stole my Key Lime Berry Parfait Mousse with churro. How rude! Also pictured are scallops and lamb chops with tabouleh. The scallops were Bobby’s favorite of the evening.

Something else we got to do that you can also do if you come to Busch Gardens (for a fee) is pet and feed kangaroos. It was so cool! They ate out of these little cups and were super friendly. It made my night!

At the end of the night, we were sufficiently stuffed, and couldn’t wait to try more food at the Food and Wine Festival when it opened the next day! We haven’t been back yet, but we plan to do so soon.

Tampa Tuesdays: Cooking With Cabot + A Giveaway

It’s time for another Tampa Tuesday post! As stated when I started these, not all posts would be specifically about Tampa, but would include things I do and experience in the surrounding areas. Today is one of those days, as I talk to you about a special Cabot Cheese event I attended in Orlando a couple of weeks ago. When I arrived at the beautiful East End Market in Orlando and headed upstairs to the APEX room, I was greeted and immediately pointed towards a delicious looking create your own parfait bar, Olde Hearth Bread Company muffins, Lineage Coffee Roasting coffee, Divine Chocolate,  Florida Milk, and all the Cabot cheese I could eat. Yes please!

We ate breakfast, got to know each other, and just had a nice relaxing few minutes to hang out before we were introduced to some of the Cabot team.

One of my favorite things we discussed was the department of gratitude. Did you know that Cabot uses reward programs to thank those that do goof. You can log your volunteer time for different events . It’s pretty cool!

We then got to meet our awesome demo chef for the day, Jimmy. I particularly liked him because he grew up in Mississippi. We all huddled into the kitchen and watched him make some delicious food! First up was cornbread. Now we are speaking my language! This southern girl was fascinated by the fact he put sweet potatoes in the cornbread! Of course we all got to taste before moving on to the next thing.

Anyone who knows me well knows that mac and cheese is one of my favorite things ever. This one definitely did not disappoint. You can check out the recipe here.

Jimmy also showed us how to make taco shells out of cheese. I will for sure be trying this out. They were so easy to do and delicious. I may have eaten a shell by itself. Don’t judge me.

After all the cooking (well, Jimmy cooking!) we did a little self care with Candace. She talked to us about stretching, and taking time for ourselves. She knows we are on the computer a lot as bloggers, and we need to MOVE! So we did just that with these fun drumsticks. Candace is so passionate about healthy living, it was fun to hear a like minded fitness lover talk to us!

Soon it was time for lunch, which was such a treat. As if we hadn’t eaten enough already, we were brought outside to enjoy the courtyard and beautifully decorated tables.

I may have found a new favorite thing: Lemonade with lavender. It was so light and refreshing, I may have had two glasses.

The rest of the food did not disappoint either, and hit the spot! We had grilled cheese sandwiches by La Femme du Fromage made with Cabot cheese of course, Houndstooth Sauce Company’s tomato basil soup, salad with apple slices, and the Skyebird lavender lemonade.

We even were “treated” to an adorable and rich dessert from Gideon’s Bakehouse: Pistachio Toffee Dark Chocolate cookies. So amazing. Then we headed back inside for our competition.

My friends know I am one of the most competitive people alive, and so of course this was no exception. We were divided into teams (my team was called “seriously sharp”,) and given a basket full of goodies and told to create a cheeseboard. The best board would win a prize, so we went straight to work. (We only had 30 minutes!) We decided on a Valentine’s Day theme and just kind of went with it. I may or may not have used my fingernails to cut out hearts from cheese. It was totally worth it, because…we won! Isn’t our board beautiful?!?

We all said our goodbyes and were given a great goody bag (as well as one to pass on to someone else). It was overall a great day, and I am so glad I had the opportunity to learn more about Cabot, meet amazing bloggers, and just generally connect with more people in my new state.
