5 Things Friday

1.) September 11th. Where were you? I was a junior in high school and I still remember sitting in class, and another teacher came in and whispered something into my teachers ear. I will never forget the look on his face, it still makes me stomach turn. Let’s continue to pray for the families of the victims, and for our country as a whole.

2.) Fall decorations. What is the “rule” in your house on when you decorate? typically I decorate labor day weekend/beginning of September, but I haven’t yet. Emma Kate’s birthday party is the 19th and I don’t want the house to look cluttered with fall décor + her party decorations, so I may just wait until after that.

3.) The treadmill boost. I ran on the treadmill yesterday, and my time was way better than it has been outside (air conditioning plus running on a belt changes many things!) What are your thoughts on this? I know running outside is totally different, but I really needed the confidence boost of running in the non 100+ degree heat to see what I could do.

4.) Recipe help. I need some new, EASY and QUICK chicken recipes. Help a sister out. I’m getting tired of the same old stuff. I have a great enchilada soup recipe I will start once it gets cooler!

5.) Gorgeous clothes. Check out my new Fabletics outfit. Isn’t it gorgeous? I am loving the romantic print and deep purple. I will post a pic soon of me wearing it. We are supposed to have cooler weather this weekend so maybe I will run in it!

QOTD: Where were you September 11? Any links to easy chicken recipes? When do you decorate for fall?

Disclosure: I was provided with this outfit by Fabletics, however all opinions are my own.

New Owners

It’s official! Yesterday was our first day taking over the Orange Leaf frozen yogurt shop here in  Mississippi. It was a very long very overwhelming day, but it went pretty well. Bobby and I were there from 9:00 yesterday morning until 10:00 last night working. Whew.

We have a LOT of work to do and changes to make to how things were run before, but the store has a lot of potential. We have access to the store cameras on our phones, and were watching two nights ago and already see some issues that need to be addressed. I know change is hard, especially for the teenagers when they could do whatever they wanted at work before with the old owner, but that won’t work with us. Hopefully all the employees get used to the changes soon and everything is smooth sailing! So far so good!

If you are local to the area, please come by the Madison store and say hello!

QOTD: What is your favorite frozen yogurt flavor?

Easy Honey Broth Chicken and Roasted Potatoes

Please enjoy this yummy recipe/guest post by my friend Lesley!

Before I get started on the recipe I want to say a huge hello to all of Heather’s readers, and a big thank you to Heather for the opportunity to share a guest post with y’all!

Heather and I have been “blogger friends” for a couple of years. We finally got to meet at runDisney’s 2013 Tower of Terror 10 Miler.

I blog about weight loss and running (among other things) at greaterfitness.wordpress.com Stop by the blog or say hello to me on Instagram, Facebook and Twitter! My username is @greaterfitness

An old friend of mine actually shared this recipe with me a few years ago. I cook it pretty frequently because it is now a favorite of mine, and it is super easy and not too bad for you. Because of its simplicity, this recipe is definitely one you can get your kids involved with. The leftovers are great as well! I suggest using any leftover chicken to toss in a salad or thinly slice the chicken and put it on a sandwich. The best part about this recipe is that it only requires two ingredients that you probably always have in your kitchen:

Yep, that’s all you need! You’ll need 1 cup of honey and 2 cups of chicken broth.

In a saucepan, combine 1 cup of the broth and ½ cup of honey. In an oven-safe dish, combine the remaining ½ cup of honey and 1 cup of broth. Stir both.

unnamed (1)

Set the saucepan aside. This will later become a sauce. Place chicken breasts or tenders in the oven-safe dish with the honey and broth mixture. This will cook in a 375 degree oven for about 35 minutes. You’ll know it is done when the chicken has a tender, white center. Once the chicken is done cooking, let it cool. While it is cooling, put the saucepan containing the remaining honey and broth mixture on medium heat. Cook until it just begins to boil and then back the heat down to simmer. Once you are ready to serve the chicken, spoon the sauce over the chicken. This keeps the chicken very moist and gives additional flavor.

I actually prepared the side of roasted potatoes before the chicken. They will cook at the same temperature, but will need an additional 15 minutes. I will usually get them ready and in the oven then start to prepare the chicken. Once the chicken is ready to go in the oven the potatoes have already been cooking for the extra time they require. This way both foods are done at the exact same time. You can use any type of potato that you like.

Simply clean the potatoes, cut into small bite-size pieces (I leave the skin on for extra flavor) and spread onto a baking/roasting pan. Liberally coat them with olive oil and a generous sprinkle of salt, pepper and Italian seasoning. Put them in the oven and you are all set!

unnamed (2)

Usually I serve the chicken and potatoes with a salad. Unfortunately, we didn’t have any lettuce when I made this recipe last week so I steamed some green beans as a substitute.

unnamed (3)

This meal is so yummy yet so simple to make. I hope that you give it a try and like it just as much as my family does!

QOTD: What is your favorite way to cook chicken?

Weekend Happenings and a Surprise

Happy Monday! We had a great weekend over here at the Montgomery house. Where to begin! Friday, Bobby had to have a minor surgery to get rid of a bone spur in his thumb that was causing him a lot of pain. We ended up at the surgery center the better part of the day which wasn’t too fun, but hopefully now Bobby won’t be in pain!

Friday night we hung out at the house, and early Saturday morning my parents came into town for Father’s Day. Our plan was to BBQ for lunch, so my dad and I went to the store to pick up some things. He also had me drive him around through his old neighborhood for the longest time, which was weird. We got back to the house, and…

IMG_5958 (2)

Surprise! My birthday isn’t until July 13th, but this was the only weekend my parents and Bobby’s family could come into town, so they threw me a little 30th birthday party. I also had a sweet friend from college and her family come. We had a lot of fun! We had delicious BBQ, and of course, cake! My favorite New Orleans cake, doberge cake.

My friend brought her baby who is about 3 weeks younger than Emma Kate, and they had so much fun playing together!

It was so sweet of Bobby to organize the fun, it was a great afternoon. That night we went out to eat and watched my favorite movie, Weekend at Bernies! It never gets old, my friends.

Sunday morning we all hung out and relaxed before mom and dad had to hit the road back to Louisiana. Happy first Father’s Day to Bobby!

Good times were had, and sadly they had to leave all too soon. Sunday afternoon we had lunch with some friends from church, and then we just hung out around the house. I got a little work done, since 2016 Disney World packages come out today, I am going to be a busy bee (email me for a quote! heather@travelwiththemagic.com).

I hope everyone had a great weekend and got to celebrate with loved ones. Luckily I will get to see my parents again in two weeks. We always have a great time!

QOTD: Did you do anything special for Father’s Day?

New Naked Juice and Giveaway

Mornings in my house can be pretty hectic. Everyone is trying to get out the door to start their day, and especially on days when the baby goes to daycare I don’t always have time to sit down and eat breakfast. As a multi tasker, it works better for me to gets things done WHILE making sure I get some breakfast, so grabbing a Naked juice before I jump in the car works for me a lot of mornings. DSC_0048

They are also a great and refreshing mid morning or afternoon snack. I like to make sure it is good and cold and then enjoy one as I cool down from a run, especially in this summer heat we have been experiencing. I have been drinking Naked juice for years, so I was really excited to learn they had some new flavors coming out. As a lover of almond milk and berry flavored things, I knew I would be all about the new berry almond nutmilk flavor, and I was correct. It. Is. Delicious. DSC_0055

Summer Travel Plans

Every summer, Bobby and I go to Destin, Florida for three days. He attends a work conference in the mornings, and then we get to hang out in the afternoons. Last year my parents went with us, and this year they are coming again! (It’s nice to have someone to hang out with while Bobby is in his meetings). Baby girl will be staying home with Bobby’s mom. She lives out of town and so she doesn’t get to see Emma Kate a lot, so I know she is excited!

We can’t take the baby because we are staying at Henderson Park Inn, an adult’s only bed and breakfast. I have written about them before, and I cannot wait to go back for the third year in a row.

At Henderson Park Inn, they spoil you rotten with an amazing buffet breakfast with create your own omelets and waffles, fruit, bacon, grits, you name it. Included in the price are water front beach chairs, towels, snacks, water and soda, and a happy hour every night.

Rooms are gorgeous and spacious as well.

Not to mention, we will be right in the heart of Destin just minutes and walking distance to restaurants and shops. It is just across the highway from the Destin Commons, the huge shopping complex, and down the road from the Silver Sands outlet mall. I love to explore Destin and find new restaurants and places to go. As a kid, we went to the beach most summers, so while I am familiar with the area, every year there are new places to go!

unnamed (26)

We always try to get away somewhere in the summer, and I try to look for ways to make our travel easier and more efficient. The Discover It Miles credit card is a great option for your summer travel plans, wherever you are looking to go. This card has no annual fee, and includes a $30 credit each year for in flight Wi-Fi! For those of you traveling out of the country, there are no foreign transaction fees. Discover it Miles cardmembers can redeem miles at any amount for cash, or as a statement credit toward their travel purchases, including commercial airline tickets, hotel rooms, car rentals, commuter transportation and taxicabs.DSC_0893

You can learn more about the card and explore rewards to see for yourself how it can help your summer travel plans!

We leave for our trip in less than a month, and I can’t wait to sink my toes into the sand again, and enjoy that Florida sunshine.

QOTD: What are your summer travel plans? Do you use a credit card to help you travel? Reward points?

Disney Girls Trip Part 3: After the Race

I left off with my recap of the Expedition Everest Challenge. The next day was Sunday, and we had plans to relax! We slept in and then decided to go to Downtown Disney for lunch at Earl of Sandwich. Jen had a Groupon, so of course we had to go, duh.

After we ate, we hit up Starbucks. (In case you weren’t aware, regular Disney coffee tastes awful, so I’m super happy Starbucks invaded the “world”).

unnamed (23)

We shopped a little then headed back to the resort to go to the pool. I really like the pool area at Caribbean Beach, and we even scored two chairs under an umbrella mostly in the shade. Hooray for saving our skin!

unnamed (24)

It was cool enough outside I didn’t even sweat nor did I need to get in the pool to cool off. This worked out because I was way too lazy to get out of my chair.

unnamed (25)

We sat and chatted a few hours then got ready for dinner at Narcoossees at the Grand Floridian. Jen and I are both big lovers of this resort, and we thought back to a girls trip we took in 2009 when we stayed there. Hopefully one day we will get to stay there again! It’s so beautiful, but also really, really, expensive. If I ever win the lottery, this is where I am going. I guess I need to start buying lottery tickets if I want to win…

unnamed (26)

We were given a nice table by the window and we had a delicious meal!

unnamed (28)

I had to get a chocolate martini since that’s what we got when we ate here on our last girls trip. It was very good.

unnamed (29)

I had steak for my meal, then finished it off with almond crusted cheesecake. I wasn’t even hungry but this dessert is so good, I got it anyway (and proceeded to eat the whole thing). Everything was really good and we had a great time!

unnamed (30)

We are pretty boring old people so we took a cab back to the resort and went to bed. We had a big day coming up at the Magic Kingdom!

QOTD: What is your favorite dessert?

Mother’s Day Treats

This Sunday I will be celebrating my first “official” Mother’s Day. I have always celebrated as a fur mom, but this year it’s a little different with an actual human baby. When I think back on my pregnancy and first few months as a mom, I remember being so overwhelmed and having so, so many questions. I am really proud of “making it” this far, so a delicious treat is in order, right?

However, when I think back on this past year, I also think of another mom who has continually been there for me and answered my DAILY pregnancy and parenting questions. This friend not only has given me advice on countless occasions, but also basically supplied my maternity wardrobe and Emma Kate’s newborn wardrobe. She made me feel normal when I had feelings of sadness, and encouraged me telling me I was a good mom when I didn’t feel like one.

I knew I wanted to share my treats with her, because she definitely deserves a decadent Mother’s Day treat!

While we were in Disney World this past week, Jen and I indulged in some delicious Shari’s Berries together for Mother’s Day. It was a great way to say “thank you” for all the help and for her friendship. We had so many amazing treats to choose from, but the strawberries and the cake truffles were our favorites!

In honor of Mother’s Day, and my own amazing mother and my friends that are mothers, I tried thinking of some reasons why moms rock, and traits of a good mom. Here is what I came up with:

-Unconditional love

-Always there for you

-Teaches you the hard but good lessons

-Listening ear

So here is a “Happy Early Mother’s Day” to all the amazing moms out there like mine, and like my friend Jen. I hope you all have a wonderful day celebrating YOU!

QOTD: What is something you would add to my list? Do you like chocolate covered strawberries?

Disclosure: I was provided with these special treats by Shari’s Berries to share for Mother’s Day, however all opinions are my own.

ASICS LA Marathon: After the Race

I have posted abut everything I did before the race with ASICS, and about the race itself, but I also wanted to share with you about my last afternoon/night in Santa Monica before flying home.  After Crystal left and I showered, I wanted nothing more than to hop into bed and take a long well deserved nap. I took a peek out my window to see people were still finishing! I felt so bad for them out in the heat.

IMG_3687 (2)

Exhaustion overcame me, and I fell into my bed…only to realize the music from the finish line was quite loud and I could not sleep! I my have dozed off for a couple of minutes, but between the music and my aching legs being very jumpy, a nice long nap was just not happening for me. After tossing and turning for over an hour, I decided to just get up. I really wanted to walk down to the Santa Monica pier because well, I had no idea if/when I would ever be back and didn’t want to miss my chance.

I texted Nathan who said he was outside watching people finish. What?!? There were still people coming in! They had moved them over to the sidewalk, but sure enough they were there. I watched with him for a minute and he walked with me part of the way to the pier. This is when I realized even though it was 4:30 or so that it was still VERY hot outside and I began to sweat and have flashbacks from the race. I made it down to the beach and walked along the boardwalk area towards the pier.

IMG_3691 (2)

It’s so interesting to me to see different beaches. This one is very different from the ones I grew up going to in Destin, Florida. We have sugar white sands and crystal clear water, and the beach is full of high rises right on the water. Here, the hotels were on the other side of the street and there were a few homes right near the water like the ones in the above photo.

IMG_3692 (2)

I finally made it to the pier and realized it was a much further walk than it looked, and then realized I still had to walk all the way back! It was really crowded, so I just walked around and took some pictures.

IMG_3694 (2)

The sun was really beating down, but there was no shade. I went over to the side for a couple of quick photos before deciding I needed to walk back and get in the shade. Holy cow were there a lot of people on the beach!

IMG_3701 (2)

it was so bright it was hard to take a selfie, heh.

IMG_3704 (2)

Close up shot of all. the. people.

IMG_3706 (2)

IMG_3707 (2)

What I found the most comical was that no one seemed to have any idea that there was even a race that day. I got some strange looks from people, and had two people ask if my medal was from the race this morning. I think I am runDisney brainwashed because I am so used to every third person telling me congratulations while I am in the parks wearing my medal. Even though I passed hundreds of folks walking around the pier, I got one “congrats” from a stranger. It’s so funny that I am so used to that, that I forget not everyone knows or cares about races going on.

IMG_3714 (2)

it was really hard to get the above shot, because it was so bright I couldn’t see a thing on my phone screen, so I had no idea if the medal was even in the shot! I again got some weird looks, and was very careful not to drop my medal into the water. I began to really sweat and knew I had a long way back, so off I went. This time, I walked up to the shaded sidewalk instead of walking along the boardwalk down closer to the water.

IMG_3719 (2)

I walked all the way back down to the finish line, it was a beautiful walk, and there were still people coming in. I will save the rest of that story for a post all it’s own, though. I headed back inside and had time to run upstairs and grab a couple of things before meeting in the lobby for dinner. We walked down Ocean Avenue to BOA Steakhouse. We had a nice long table outside overlooking the water, and they had a special menu made up for us.

IMG_3727 (2)

The coolest part of it, was Deena and Andrew Kastor sat down right across from me! It was so awesome getting to chat with them over dinner! I also got to chat with Leta some more from Pop Sugar fitness. She’s super sweet!

IMG_3728 (2)

Coach Kastor gave us a final congratulatory speech, and challenged us to go out and inspire someone to run. He did a great job!

IMG_3732 (2)

The food was amazing, and then we all got our own desserts. Heaven.

IMG_3736 (2)

As if that weren’t enough, they came out with flaming cotton candy! Us runners know how to eat.

IMG_3738 (2)

Sadly it was time for us to walk back to the hotel. We hugged everyone and said or final goodbyes before hitting the hay for the night. My car was coming to get me at 6:00 in the morning, so I attempted to go to sleep at a decent time.

My flight left at 8:00 the next morning, a straight shot to New Orleans, and then I drove home to Mississippi, completing my day of travel at close to 8:00 that night. It was amazing to sleep in my own bed, I just with the baby got the memo when she woke up at 6:30 that my body thought it was 4:30. Smile

So that’s my recap, I just have one more special post to write, but this concludes my amazing trip. I was so spoiled by ASICS, they are an amazing and fun company and it was an honor to work with them over the past few months. I hope you have the bug to run the LA marathon for yourself now. Even though the full isn’t my favorite distance, I truly loved the course, the people, and the organization of this race. Go HERE to sign up now!

QOTD: What do you usually eat after a heard race?

Something Sweet and $100 Visa Gift Card Giveaway

I have always loved the taste of sugar, candy, and delicious treats. As I am now 6 months post baby, I am really trying to focus on making more healthy choices and small changes that can add up to help me on my health an fitness journey. A big weakness of mine is flavored coffees and creamers. I can’t stand to drink coffee black, but as a new mom I am throwing back way more calories than necessary because I need something sweet in my cup… or multiple cups a day. Please tell me I’m not the only sweet coffee addict?!? IMG_3343 (2)
I recently realized this was an issue, so I was excited to learn about Born Sweet™ Zing™ Zero Calorie Stevia Sweetener. This stuff has been a lifesaver because it tastes good and is better for my post baby weight loss efforts by not adding a ton of extra calories to my multiple cups of coffee. (One packet is equal to the sweetness of two teaspoons of sugar). IMG_3339 (2) Zing™ is made with only real ingredients, extracting the sweetness found in Mother Nature’s stevia plant.  It has zero calories, and is easy to sprinkle in your coffee.  Or, you can sprinkle it on some fruit, even in a smoothie or in some tea. (You all know how much I love sweet tea!) I have always ALWAYS had a serious sweet tooth, and while I know it can lead to major temptations, it’s just something I have always struggled with. I can work out all day long, but when it comes to sweets I tend to overdo it. But as I’m trying to make small changes like this one, it will help me cut back on calories and still enjoy the sweet flavor I love.
