Enchilada Casserole with Ground Turkey

 

Good morning! I don’t do this too often, but I have a recipe to share with you today! I have made it twice now and Bobby loves it. It’s easy, quick, and we usually have leftovers, which is a plus for me….no cooking the next night! I found a variation of it online but changed it up a bit to make it more to my liking. I am really picky and I even like this, so I think it would be a kid favorite as well. I am not a HUGE onion fan so I chop them up really tiny and don’t even notice them.

Enchilada Casserole with Ground Turkey

-Fills a 13×9 casserole dish, 30-35 minute cook time, 15 minute prep time

INGREDIENTS:

- one package of Jenni-O ground turkey

-one can of enchilada sauce ( I use mild)

-1/3 of an onion

- 6 flour tortilla shells (I use whole grain)

-cheddar cheese (1-1.5 cups)

-cooking spray

-Preheat oven to 350

-cook turkey according to package. drain

-chop and add onion, cook in pan with turkey 3-5 minutes

-heat 1/2 can of enchilada sauce in saucepan

-spray bottom of  casserole dish

-take one tortilla, dip one side in heated sauce in pan, put in center of casserole dish

-take second tortilla, tear in half, dip halves in sauce and put in bottom of the dish so bottom of the dish is covered

- take half of the cooked turkey/onion combo and put on top of tortillas

-Sprinkle a layer of cheese on top of turkey

-repeat steps of dipping tortillas and layering on top of first layer (one whole shell and one torn in half)

-pour the rest of the turkey/onion combo on the shells, add cheese on top

-take final two shells, dip in sauce and layer on top of mixture again

-pour remaining half of enchilada sauce on top of everything and top with cheese

-bake, uncovered, for 30-35 minutes

  3. Our top two recipes are turkey burgers and meat sauce. We add worchesteshire, egg whites, McCormic Hamburger seasoning, diced jalepenos, and Rouses Cajun seasoning to the meat to make the burger patties. The eggwhites are key to keeping them moist and in one piece on the grill. The meat sauce couldn’t be easier–brown meat in skillet with the trinity, drain, combine in pot with 1 jar of Emeril’s Homestyle marinara, add a little garlic powder and italian seasoning, simmer for an hour and serve with whole wheat pasta or over quinoa. It makes a thick sauce.

  4. Yum! I make something very similar but add chopped zucchini and black beans. Now you have me wanting it tonight, but pork is already in the slow cooker!

  5. You know, I’ve started making my enchiladas into more of a casserole too. Not as pretty perhaps, but so much easier.

  13. All my ground turkey recipes are my fave (since sadly I can’t have ground beef). I really really love meatloaf, though.
